Vegetarian quesadillas

Inspired by NYT Cooking "Sheet Pan Quesadillas." I'm afraid nothing could induce me to care how you make this recipe.

Note: You might have to cook two rounds to get through all the ingredients. I usually just cook one round and store the leftover raw ingredients prepped in the fridge. That way, on a later date, I can quickly assemble quesadillas and bake more.

  1. If you have motivation, press the tofu. If you don't, I literally don't care. If your vegetarian chicken is frozen though, definitely defrost it. Honestly if you want to use real meat I also don't care.
  2. Julienne onion and bell peppers.
  3. Preheat oven to 425.
  4. Drizzle a little oil on two baking sheets.
  5. Use a tortilla to spread the oil.
  6. Lay tortillas out on the baking sheet (as many as will fit without overlapping too much).
  7. Layer shredded cheese onto tortillas.
  8. Drain canned corn and then sprinkle corn onto tortillas.
  9. Next add onions.
  10. Next add protein (tofu, veggie chicken, meat, etc.).
  11. Crack black pepper over everything.
  12. Sprinkle your seasoning over the tacos.
  13. Throw the bell peppers onto the tray anywhere there's space. It doesn't matter if it's on the tortillas or not I don't care.
  14. Once oven is hot, place trays into oven.
  15. Bake for 5 minutes.
  16. After 5 minutes, switch the racks that the trays are on. If desired, you can use a spatula to fold the quesadillas over on themselves but if I'm trying to maximize on fillings, I leave them open-faced.
  17. Bake for another 5 minutes.
  18. This is optional, but at this point you can remove the quesadillas from the pan, leaving just the bell peppers. Then send the bell peppers in again until they are cooked to your desired doneness. I am way too lazy to do this and in fact have never done this in my life. But it would be remiss of me not to be transparent regarding the semi-rawness of the bell peppers at this stage if further cooking does not happen.
